Fruit Focus: Cherries

This is the second in our series of posts regarding the different fruits that we grow here at DeFisher Fruit Farm and the different products we can make with them at Apple Country Spirits.  The first entry in this series can be found here: http://applecountryspirits.com/blog/fruit-focus-apples/

Today's focus is on Cherries.  Cherries are our second biggest crop behind apples.  DeFisher Fruit Farm grows close to 100 acres of cherries all together, with a majority being tart cherries.  The oldest block of tree we have is over 35 years old and we have been growing cherries for ...

Spring is here!!!  I don't care that it is supposed to go down to 30 something tonight.... I see the sun, I see flowers and I see people breaking out of their long hibernation.  We are as busy as bees (like our farm manager Brian's bees even!) here at the distillery working on new products, events and cool ideas.  The Lake Ontario Wine Trail has two events under our belts for the year, and the next one won't be until July (hint: Booze and Music at a venue on a different Eddy Road).  So, we have been ...

Even though there is snow on the ground; we can actually see the sun -- so it is spring!  That means that the Lake Ontario Wine Trail is back in the full swing of things.  Many of the wineries are clearing the snow off and opening their doors on a new year.  With the start of the season, comes the most popular and, in my opinion, most unique of the Wine Trail Events.

With that in mind I thought that I would ...

Hello everyone!  It has been far to long since I posted but we have been in the heart of harvest season, and have been hard at work on new products for you all to enjoy.  We are working on two flavored vodkas, and should have them out early in the new year.  We wanted them out in time for the holiday season, unfortunately as we have learned everything takes longer to accomplish in this industry.  The flavors will be Peach and Tart Cherry.  We grow both, so will be using natural flavors instead of artificial syrups.

The next product we ...

Hello everyone.  Fall is finally here!  We are picking fruit like mad and are in the process of turning some of it into new products.  A couple of days ago we pit a bin of peaches (about 700 pounds) and plopped them into some over proofed vodka.  This is the first step in our peach infused vodka!!

As the season progresses and the weather gets colder we will be out and about doing tastings at different festivals and events.  If you haven't had a chance to stop by the distillery, maybe you can meet us at one of the ...
