AppleJack is one of the great American spirits. It has been around since alcohol was being made in the colonies. While it may not have always been called AppleJack its spirit is as old as the colonies. Today AppleJack is a sub category of Apple Brandy.
The un-aged version is very much like a moonshine made with apples. Our motto with the un-aged is "Fresh from the still into your glass." We mean that in every sense -- as we kept it over proof so that we did not have to dilute the intensity of the spirit as it is in its rawest form. Another advantage to selling it over proof is that it mixes exceptionally well in cocktails, punches and home infusions.
Our two-year old AppleJack is aged in used bourbon barrels from one of the famed Kentucky bourbon distilleries. It starts with an aroma of nutmeg and butterscotch that changes as it sits in the glass to more of a molasses note.
